In a mixing bowl, combine 2 cups of all-purpose flour, 1/2 cup of sugar, 2 teaspoons of baking powder, and 1/4 teaspoon of salt. Mix well.
Pour in 3/4 cup of almond milk, 2 tablespoons of melted coconut oil, and 1 teaspoon of vanilla extract. Stir until the dough comes together.
Transfer the dough onto a floured surface and knead it for about 5 minutes until it becomes smooth. Roll out the dough to about 1/2 inch thickness.
Using a donut cutter or a round cookie cutter, cut out donut shapes from the rolled-out dough. You can also use a glass and a smaller cap to make the outer and inner circle.
This is where the crispy twist comes in! Take each donut shape and make a small cut or slit in the center with a knife. Gently twist the donut to create a twisty shape. It will look super fancy!
Heat vegetable oil in a deep fryer or a large pot. Once the oil reaches 350°F (175°C), carefully lower the donuts into the hot oil using a slotted spoon or tongs. Fry for 2-3 minutes on each side until golden brown and crispy.
Transfer the fried donuts onto a paper towel-lined plate to drain any excess oil. While still warm, toss the donuts in a bowl of cinnamon sugar or powdered sugar for an extra delicious coating.
