Pour a can of chickpeas into a sieve over a bowl. Drain the chickpeas and reserve the liquid, which is called aquafaba. You'll need about 1/2 cup (120ml) of aquafaba for this recipe.
Pour the aquafaba into the bowl of a stand mixer fitted with a whisk attachment. Start on low speed and gradually increase to high. Whip the aquafaba for about 5 minutes, or until it forms stiff peaks and looks like fluffy white clouds.
Slowly add 1 cup (200g) of granulated sugar to the whipped aquafaba, one tablespoon at a time. Continue to whip on high speed until the sugar is fully incorporated and the mixture is glossy.
Preheat your oven to 200°F (93°C) and line a baking sheet with parchment paper. Transfer the meringue mixture to a piping bag fitted with a star tip. Pipe small mounds onto the prepared baking sheet, shaping them like adorable little kisses.
Place the baking sheet in the preheated oven and bake the meringue kisses for about 1 hour. They should be dry to the touch and easily lift off the parchment paper without sticking.
