Drain a can of unsalted chickpeas and collect the liquid (aquafaba) in a mixing bowl. Using an electric mixer, beat the aquafaba on high speed until soft peaks form. It should resemble fluffy clouds!
Gradually add sugar (about 3/4 cup) while continuing to beat the aquafaba. This will sweeten the meringue frosting and stabilize it. Also, add 1/2 teaspoon of cream of tartar to help create a light, airy texture.
Whisk the mixture on high speed for about 10-15 minutes until stiff peaks form. You'll know it's ready when you can turn the mixing bowl upside down and the meringue holds its shape without falling. This is where the magic happens!
Once you have your fluffy aquafaba meringue, you can flavor it with a teaspoon of vanilla extract or any other flavorings you desire. Gently fold in the flavoring to maintain the meringue's airy texture.
