In a medium bowl, combine 2 cups of all-purpose flour, 1/2 cup of sugar, 2 teaspoons of baking powder, and 1/2 teaspoon of salt. Mix well.
In a separate bowl, whisk together 3/4 cup of almond milk, 1/4 cup of melted coconut oil, and 1 teaspoon of vanilla extract. Pour the wet mixture into the dry mixture and stir until just combined.
On a lightly floured surface, roll out the dough to about 1/2 inch thick. Use a donut cutter or a round cookie cutter to cut out your donut shapes. Keep the donut holes too! Heat vegetable oil in a large pot or deep fryer to 375°F (190°C). Carefully drop the donuts into the hot oil, frying for about 2-3 minutes per side or until golden brown. Remove the donuts with a slotted spoon and place them on a paper towel-lined plate to absorb excess oil.
In a small bowl, whisk together 1 cup of powdered sugar and 2 tablespoons of maple syrup until smooth. If the glaze is too thick, add a splash of almond milk to thin it out.
Dip each donut into the maple glaze, coating the top completely. Allow the excess glaze to drip off, then place the donuts on a wire rack to set. Repeat with all the donuts and donut holes.
