Using a slotted spoon, carefully remove the balsamic caviar from the oil and transfer it into a fine mesh strainer. Rinse the caviar under cold water to remove any excess oil. Pat it dry gently with a paper towel.
Cut the melon into bite-sized cubes. Take a slice of prosciutto and wrap it around a cube of melon. Repeat this process until you have all the melon wrapped.
Arrange the prosciutto-wrapped melon on a serving platter. Carefully spoon a small amount of the balsamic caviar on top of each melon cube.
