If using small tortillas, warm them up in a dry skillet or microwave them for a few seconds until they are soft and pliable. If using Banh Mi bread rolls, lightly toast them in the oven for a crisp exterior.
Lay a tortilla or open a Banh Mi roll on a clean flat surface. Spread a thin layer of Sriracha sauce and mayonnaise on the tortilla or inside the roll. Place a few slices of the marinated protein on top. Add a generous amount of pickled veggies, cilantro, and jalapenos. Squeeze a lime wedge over the fillings and fold the tortilla or close the roll to enclose all the flavorful goodness. Repeat this step for each taco you want to make.
Arrange the Banh Mi Tacos on a platter or a taco holder, and serve them to your delighted guests. Encourage everyone to squeeze a little extra lime juice and top their tacos with more Sriracha sauce if they like it spicy.
