Bake for 15 minutes, then reduce the oven temperature to 375°F (190°C) and bake for an additional 20 minutes, or until the choux puffs are golden brown and puffed up.
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add 1 finely chopped onion and sauté until translucent. Then, add 2 cups of cooked shredded chicken, 1/2 teaspoon of garlic powder, 1/2 teaspoon of dried thyme, salt, and pepper to taste. Cook for a few minutes until the chicken is heated through and the flavors are well combined.
Using a small knife or pastry bag, carefully make a small hole in the bottom of each choux puff. Fill each choux puff with the chicken filling, using a spoon or piping bag. Be generous but avoid overfilling.
