Be careful not to oversalt your soup, as the ham already adds a good amount of saltiness.
In a large pot over medium heat, melt 2 tablespoons of butter. Add 1 diced onion, 2 chopped carrots, and 2 minced cloves of garlic. Sauté until the vegetables are tender and fragrant.
Pour in 2 cups of dried split peas and 6 cups of chicken or vegetable broth. Stir well to combine, then bring the mixture to a boil.
Reduce the heat to low and let the soup simmer for about 1 hour, or until the split peas are tender. Stir occasionally to prevent sticking. Meanwhile, dice 1 cup of cooked ham into small pieces.
Using an immersion blender or a regular blender, carefully puree the soup until smooth. If using a regular blender, work in batches and be cautious of hot soup splatters. Return the soup to the pot and stir in the diced ham. Taste and season with salt and pepper as desired.
Ladle the soup into bowls and garnish with a sprinkle of chopped fresh herbs, such as parsley or chives. Serve hot and enjoy!
