Gather up these tasty tidbits: 2 cups of dried split peas, 1 ham hock or 1 cup of diced ham, 1 chopped onion, 3 minced garlic cloves, 2 chopped carrots, 2 chopped celery stalks, 6 cups of chicken or vegetable broth, 2 bay leaves, 1 teaspoon of dried thyme, salt and pepper to taste.
Rinse the split peas thoroughly, then set them aside. In a large pot, heat some olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant and slightly golden.
