Preheat your oven to 375°F (190°C) to get it nice and toasty for your Cheesy Croque Monsieur.
In a small saucepan, melt 2 tablespoons of butter over medium heat. Add 2 tablespoons of all-purpose flour and cook for about 1 minute, stirring constantly. Slowly whisk in 1 cup of milk and continue cooking until the sauce thickens. Season with salt, pepper, and a pinch of nutmeg.
