In a large mixing bowl, combine 2 cups of grain-free rolled oats, 1 cup of unsweetened shredded coconut, 1 cup of raw nuts (like almonds or cashews), and 1/4 cup of chia seeds. Give it a good stir to make sure everything is evenly mixed.
In a separate microwave-safe bowl, melt 1/2 cup of peanut butter. You can do this in short bursts of 15 seconds, stirring in between, until it becomes smooth and runny. If you don't have a microwave, you can also melt the peanut butter on the stovetop over low heat.
Pour the melted peanut butter over the dry ingredients and give everything a good mix. Make sure every oat, nut, and coconut flake gets coated with that delicious peanut butter goodness!
Spread the mixture evenly on a lined baking sheet. Pop it in a preheated oven at 325°F (160°C) for about 20-25 minutes or until the granola turns a lovely golden brown. Keep an eye on it and give it a stir halfway through to ensure even baking.
Once the granola is out of the oven, let it cool completely on the baking sheet. This will give it that extra crunch we all love. Once cool, transfer it to an airtight container and store at room temperature for up to two weeks (if it lasts that long!). Enjoy a handful on its own, sprinkle it over yogurt, or munch on it as a delightful snack!
