Start by preheating your oven to 325°F (160°C). This will ensure that it's nice and hot when it's time to bake the granola.
In a large mixing bowl, combine 2 cups of almond flour, 1 cup of unsweetened shredded coconut, 1/4 cup of melted coconut oil, 1/4 cup of pure maple syrup, 1 teaspoon of vanilla extract, 1/2 teaspoon of ground cinnamon, and a pinch of salt. Mix everything together until it forms a sticky mixture.
Take a baking sheet lined with parchment paper and spread the granola mixture evenly onto it. Make sure it's not too thick, as you want it to bake evenly and become nice and crispy.
