  • Unsweetened Coconut Flakes 1 cup (100g)
  • Pumpkin Seeds 1/2 cup (60g)
  • Sesame Seeds 1/4 cup (25g)
  • Flaxseeds 1/4 cup (30g)
  • Chia Seeds 1/4 cup (30g)
  • Coconut Oil 1/2 cup (120ml)
  • Maple Syrup 1/2 cup (120ml)
  • Vanilla Extract 1 teaspoon

Preheat the oven

Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.

Prepare the dry ingredients

In a large bowl, combine 2 cups (225g) of mixed nuts, 1 cup (100g) of unsweetened coconut flakes, 1/2 cup (60g) of pumpkin seeds, 1/4 cup (25g) of sesame seeds, 1/4 cup (30g) of flaxseeds, and 1/4 cup (30g) of chia seeds. Mix well.

Mix in the wet ingredients

In a separate bowl, whisk together 1/2 cup (120ml) of melted coconut oil, 1/2 cup (120ml) of maple syrup, and 1 teaspoon of vanilla extract. Pour the wet ingredients over the dry ingredients and stir until everything is well coated.

Transfer the granola mixture to the prepared baking sheet and spread it out in an even layer.

Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the granola is golden brown and fragrant. Make sure to stir the mixture every 10 minutes to ensure even baking.
