In a large mixing bowl, combine 2 cups of all-purpose flour, 2 tablespoons of granulated sugar, and a pinch of salt. Add 1/2 cup of cold unsalted butter cut into small pieces. Use your fingers or a pastry cutter to mix everything together until the mixture resembles coarse crumbs.
In a small saucepan, combine 1 cup of your favorite fruit jam (strawberry, raspberry, or whatever tickles your fancy) with 2 tablespoons of cornstarch. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil. Remove from heat and let it cool.
Preheat your oven to 375°F (190°C). On a lightly floured surface, roll out your dough to about 1/8 inch thickness. Cut out rectangles of about 4x3 inches using a knife or a fancy pastry cutter if you're feeling extra fancy.
Place a dollop of your cooled fruit filling onto half of the cut-out rectangles. Leave about 1/4 inch border around the edges. Place another rectangle on top of each filled one and press around the edges with a fork to seal them together.
Transfer your filled pop tarts onto a baking sheet lined with parchment paper. Pop them into the preheated oven and bake for about 15-20 minutes, or until they turn golden brown.
Once your pop tarts are done baking, let them cool on a wire rack. If you're feeling fancy (and why wouldn't you be?), drizzle some icing on top and sprinkle with colorful sprinkles for that extra gourmet touch. It's time to dig in and savor the homemade deliciousness!
