Take note
Be careful not to overmix the batter, as it can result in tough muffins. Also, make sure to let the muffins cool completely before removing them from the pan, or they may break apart.
First things first! Collect all the items you'll need to whip up these delightful blueberry muffins. Here's what you'll be using:
Before you can start baking, preheat your oven to 375°F (190°C). This will ensure that it's nice and hot when your muffins are ready to go in.
In a small bowl, mix together 1/4 cup of granulated sugar, 1/4 cup of all-purpose flour, and 2 tablespoons of cold butter. Use your fingers or a fork to combine the ingredients until crumbly. Set the streusel aside for later.
In a large bowl, whisk together 2 cups of all-purpose flour, 1/2 cup of granulated sugar, 2 teaspoons of baking powder, and 1/2 teaspoon of salt. Make sure all the dry ingredients are well combined.
In a separate bowl, beat together 1 cup of milk, 1/4 cup of melted butter, 1/4 cup of vegetable oil, 2 eggs, and 1 teaspoon of vanilla extract. Mix until everything is well incorporated.
Pour the wet ingredients into the bowl of dry ingredients. Stir gently with a rubber spatula until the batter just comes together. It's okay if there are a few lumps remaining. Avoid overmixing!
Carefully fold in 1 and 1/2 cups of fresh blueberries into the muffin batter. Be gentle to avoid crushing the berries, as you want them to stay whole.
Line a muffin pan with paper liners. Fill each cup about 2/3 full with the blueberry batter. This should yield approximately 12 muffins.
Sprinkle your prepared streusel topping generously over each muffin, pressing it gently into the batter to help it stick.
Place the muffin pan in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Once baked, remove from the oven and allow the muffins to cool in the pan for 5 minutes. Then, transfer them to a wire rack to cool completely. Now it's time to enjoy these moist and delicious blueberry muffins!
