In a large bowl, cream together 1 cup of butter and 1 1/2 cups of granulated sugar until light and fluffy. Beat in 2 eggs and 1 teaspoon of vanilla extract. Gradually add in 4 cups of all-purpose flour, 1 teaspoon of baking powder, and 1/2 teaspoon of salt. Mix until the dough comes together.

Shape the Donut Cookies

Divide the cookie dough into two equal portions. Roll out each portion to about 1/4 inch thickness. Use a donut-shaped cookie cutter to cut out donut shapes from the dough. Then use a smaller round cookie cutter to cut out the center of each donut shape. Carefully transfer the cookies to a baking sheet lined with parchment paper.
