In a large bowl, mix together 2 ½ cups of all-purpose flour, 1 teaspoon of baking powder, and a pinch of salt. In another bowl, cream together 1 cup of unsalted butter and 1 ¼ cups of granulated sugar until light and fluffy. Add in 2 teaspoons of vanilla extract and 1 large egg, and mix until combined. Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. Divide the dough in half, wrap each portion in plastic wrap, and chill in the refrigerator for at least 1 hour.
Preheat your oven to 350°F (175°C). Once the dough has chilled, roll it out on a lightly floured surface to about ¼ inch thickness. Use emoji-shaped cookie cutters to cut out your cookies and carefully transfer them to a baking sheet lined with parchment paper. Space them about 2 inches apart to allow for spreading.
Bake the cookies for 10-12 minutes, or until the edges are golden brown. Keep a close eye on them, as they can quickly go from golden to overdone. Once baked, remove the cookies from the oven and let them cool on the baking sheet for a few minutes. Then, transfer them to a wire rack to cool completely.
Prepare your favorite royal icing by mixing 3 cups of powdered sugar, 2 tablespoons of meringue powder, and 4-5 tablespoons of water in a mixing bowl. Divide the icing into separate bowls and add your desired food coloring to each bowl. Mix well until the icing reaches your desired consistency. Use a piping bag or a squeeze bottle with a small tip to pipe the icing onto the cooled cookies, creating different emoji faces. Let the icing set before serving or storing the cookies in an airtight container.
