Start by peeling and dicing 2 large apples. In a mixing bowl, combine the diced apples, 1/4 cup of granulated sugar, 1/2 teaspoon of ground cinnamon, and a pinch of salt. Mix well until the apples are coated in the sweet and spiced goodness.
Next, it's time to roll out the empanada dough. Dust a clean surface with flour and roll the dough into a thin circle. Using a round cutter or a small plate as a guide, cut out circles from the dough. Each circle should be about 4-5 inches in diameter.
Now comes the fun part! Spoon a generous tablespoon of the apple filling onto the center of each dough circle. Make sure not to overfill them, as it might make sealing the edges a bit tricky. Fold the dough in half, creating a half-moon shape, and press the edges together to seal. Use a fork to crimp the edges for a decorative touch.
Preheat your oven to 375°F (190°C). Place the filled empanadas on a lined baking sheet, leaving a little space between each one. Brush the tops with a beaten egg for a golden finish. Pop the tray in the oven and bake for about 15-20 minutes, or until the empanadas are beautifully golden brown.
Allow the baked apple empanadas to cool slightly before serving. Sprinkle some powdered sugar on top for an extra touch of sweetness, and enjoy warm or at room temperature.
