Start by preheating your oven to 400°F (200°C). Cut 2 pounds (900g) of potatoes into thin strips, like french fries. Spread them in a single layer on a baking sheet lined with parchment paper. Drizzle with olive oil and season with salt, pepper, and a pinch of paprika. Toss to coat the fries evenly.
Pop the baking sheet into the preheated oven and bake for about 30 minutes, or until the fries are golden and crispy. Give them a little shake halfway through to ensure even browning.
While the fries are baking, let's whip up the guacamole. In a medium bowl, mash 2 ripe avocados with a fork. Add 1 small diced tomato, 1/4 cup (60ml) diced red onion, the juice of 1 lime, and a handful of chopped cilantro. Season with salt and pepper to taste. Mix everything together until well combined.
Once the fries are done, transfer them to a serving platter and generously top them with the prepared guacamole. Don't be shy! Sprinkle some shredded cheese, sliced jalapeños, and crispy bacon bits on top. To make it extra special, drizzle with some sour cream and sprinkle with a dash of hot sauce.
