In a bowl, mix together 1 cup of cooked crab meat, 1/4 cup of mayonnaise, 1/4 cup of grated Parmesan cheese, 1/4 cup of diced green onions, 1/4 teaspoon of garlic powder, and a pinch of salt and pepper. Stir until everything is well combined.
Roll out a can of refrigerated croissant dough onto a clean surface. Cut the dough into 8 triangles by following the pre-made perforations.
Place a spoonful of the prepared crab filling onto the wide end of each croissant triangle. Spread it slightly, leaving a small border around the edges.
Starting from the wide end, carefully roll up each croissant triangle, tucking in the sides as you go. Place them on a baking sheet lined with parchment paper, with the pointy end tucked under.
Preheat your oven to 375°F (190°C) and bake the mini crab croissants for about 10-12 minutes, or until golden brown. Keep an eye on them, as oven temperatures can vary.
Once the croissants are baked and slightly cooled, gently press two small, pitted black olives into each croissant to create adorable eyes. Feel free to use toothpicks if needed to secure them.
