On a lightly floured surface, roll the dough into a rectangle. Place 1 cup of cold, unsalted butter in the center of the dough. Fold the dough over the butter, sealing it inside. Roll the dough out into a larger rectangle.
Fold the dough into thirds like a letter, then wrap it in plastic wrap. Chill the dough in the refrigerator for 1 hour.
Remove the dough from the refrigerator and roll it out again into a rectangle. Fold it into thirds, then chill for another hour. Repeat this process once more.
Roll the dough out into a large rectangle, then cut it into triangles. Starting at the wide end, roll each triangle tightly to form a croissant shape. Place the shaped croissants on a baking sheet lined with parchment paper.
Cover the baking sheet with a clean kitchen towel and let the croissants rise at room temperature for 2 hours. They should double in size.
Preheat your oven to 400°F (200°C). Brush the croissants with an egg wash and bake for 15-20 minutes, until golden brown and deliciously flaky.
