Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Cut 8 sticks of mozzarella cheese into slender broomstick shapes, about 4 inches long. Insert a pretzel stick into one end of each cheese stick, leaving about an inch of pretzel handle exposed.
In a shallow bowl, whisk together 1 cup of all-purpose flour, 1 teaspoon of paprika, and a pinch of salt. In a separate bowl, beat 2 eggs.
Dip each broomstick cheese stick into the flour mixture, shaking off any excess. Then, dip and coat it evenly in the beaten eggs. Give it another quick dip in the flour mixture for a double coat of magic!
Place the coated broomstick cheese sticks on the prepared baking sheet. Bake in the preheated oven for about 10-12 minutes, or until golden and crispy. Keep an eye on them, no magic should be left unwatched!
Once out of the oven, let the Broomstick Cheese Sticks cool for a few minutes. Serve them on a platter with your favorite dipping sauce. Enjoy the cheesy goodness and let the magic carry you away!
