Get your mixing bowl ready and gather the following ingredients: 2 cups of mixed nuts (such as almonds, cashews, and walnuts), 1 cup of unsweetened coconut flakes, 1 cup of pumpkin seeds, 1 cup of dried cranberries, 1/2 cup of sunflower seeds, 1/4 cup of honey, 2 tablespoons of coconut oil, 1 teaspoon of vanilla extract, and a pinch of salt.
Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper for easy cleanup.
In a large mixing bowl, combine the mixed nuts, coconut flakes, pumpkin seeds, dried cranberries, sunflower seeds, honey, coconut oil, vanilla extract, and a pinch of salt. Stir everything together until all the ingredients are well coated.
Spread the mixture evenly onto the prepared baking sheet. Bake in the preheated oven for 15-20 minutes, or until the granola is golden brown, stirring halfway through for even baking.
