In a saucepan, combine 1 cup of hibiscus tea, 1/2 cup of mixed berries (such as strawberries, raspberries, and blueberries), 1/4 cup of sugar, and the juice of half a lemon. Bring the mixture to a gentle simmer over medium heat, stirring occasionally until the sugar has dissolved and the berries have softened. Remove from heat and let it cool.
Once the gelée mixture has cooled, strain it through a fine-mesh sieve, discarding the solids. You should be left with a beautiful, vibrant liquid full of delicious flavors.
In a cocktail shaker filled with ice, combine 2 ounces of vodka, 1 ounce of elderflower liqueur, and the juice of half a lime. Shake vigorously for about 15 seconds to chill the ingredients and mix them well.
Add 2 ounces of the strained hibiscus and berry gelée mixture to the cocktail shaker. Shake once more to combine all the flavors and create a beautiful pink hue throughout.
Strain the cocktail into a chilled martini glass or coupe, using a fine-mesh sieve to catch any ice shards or small berry pieces. Garnish with a fresh berry or a twist of lime peel, and serve with a smile!
