In a small saucepan, combine 1 cup of water, 1 cup of sugar, and a handful of fresh lilac petals. Heat over medium heat until the sugar has dissolved and the mixture is fragrant. Remove from heat and let cool.
In a blender, add 1 can of lychees (drained), 1/4 cup of lilac syrup, and a squeeze of fresh lemon juice. Blend until smooth and set aside.
In a mixing bowl, whip 1 cup of heavy cream until soft peaks form. Be careful not to over-whip!
Gently fold the lychee mixture into the whipped cream until well combined. Take your time and enjoy the process!
