Now it's time to make the luscious chocolate mousse. In a heatproof bowl, combine 8 ounces of chopped semisweet chocolate and 1/2 cup of heavy cream. Melt the chocolate and cream together in the microwave or over a double boiler, stirring until smooth. Set aside to cool slightly. In a separate bowl, whip 1 cup of cold heavy cream until soft peaks form. Gently fold the whipped cream into the melted chocolate mixture until well combined. Refrigerate the mousse for about 30 minutes to firm up.
Once the cake layers are cool and the mousse has firmed up, it's time to assemble the cake. Place one cake layer on a serving plate. Spread a generous amount of chocolate mousse evenly over the top. Carefully place the second cake layer on top and press down gently. Spread more chocolate mousse on the top and sides of the cake, using a spatula to create a smooth finish. You can also get creative and decorate the cake with chocolate shavings or fresh berries, if desired.
Finally, refrigerate the cake for at least 4 hours, or overnight if possible, to allow the flavors to meld together and the mousse to set. When you're ready to serve, slice into the cake and watch as your guests' eyes light up with delight! Serve chilled and enjoy every rich, chocolatey bite.
