Brew a shot of espresso or make a strong cup of coffee. Allow it to cool completely. In a cocktail shaker, combine 1 ½ ounces of vodka, 1 ounce of coffee liqueur, ½ ounce of simple syrup, and the cooled espresso. Add a handful of ice and shake vigorously for about 15 seconds.
In a heatproof bowl, combine 6 ounces of dark chocolate (chopped) and ¼ cup of heavy cream. Place the bowl over a saucepan of simmering water, making sure the bottom of the bowl doesn't touch the water. Stir the chocolate and cream until melted and smooth. Remove from heat and let it cool slightly.
In a separate bowl, whip 1 cup of heavy cream until soft peaks form. Be careful not to over-whip!
Gently fold the melted chocolate into the whipped cream, making sure to incorporate it evenly. Then, mix in the Espresso Martini (from step 1) until fully combined.
Divide the mousse mixture into serving glasses or bowls. Cover and refrigerate for at least 2 hours, or until set. When ready to serve, top with a dollop of whipped cream and a sprinkle of chocolate shavings. Grab a spoon and dig in!
