Start by preheating your oven to 350°F (175°C). In a medium-sized bowl, combine 1 ½ cups of crushed chocolate cookies and 6 tablespoons of melted butter. Mix until the cookie crumbs are fully coated with butter. Press the mixture onto the bottom and sides of a 9-inch pie dish, forming an even crust. Bake in the oven for 8-10 minutes, then set aside to cool.
In a heatproof bowl, combine 1 cup of semisweet chocolate chips and 2 tablespoons of unsalted butter. Place the bowl over a saucepan filled with simmering water, making sure the bottom of the bowl doesn't touch the water. Stir until the chocolate and butter melt and become smooth. Remove from heat and let it cool for a few minutes. In a separate bowl, whip 1 ½ cups of heavy cream until stiff peaks form. Gently fold the melted chocolate mixture into the whipped cream until well combined.
Pour the chocolate mousse mixture onto the cooled chocolate crust. Use a spatula to smooth the top. Place the pie in the refrigerator and let it chill for at least 4 hours, or until set. For best results, leave it overnight to allow the flavors to meld together. Once fully chilled, serve chilled and garnish with whipped cream and chocolate shavings, if desired.
