Be careful not to over-whip the cream, as it can turn into butter. Also, make sure to refrigerate the pie for the suggested time to allow it to set properly.
Begin by crushing 1 ½ cups of graham crackers in a food processor or by placing them in a ziplock bag and rolling over them with a rolling pin. In a bowl, mix the crushed graham crackers with ⅓ cup melted butter and 2 tablespoons of sugar. Press the mixture into a 9-inch pie dish, making sure it's evenly distributed on the bottom and up the sides.
In a blender or food processor, puree 2 cups of fresh strawberries until smooth. If desired, you can strain the puree to remove the seeds, but it's totally up to you. Set aside.
In a mixing bowl, combine 1 cup of strawberry puree (reserve the remaining puree for later), 1 cup of heavy cream, and ½ cup of powdered sugar. Use an electric mixer or whisk to beat the mixture until it thickens and forms soft peaks. Be careful not to over-whip!
Pour the prepared strawberry mousse filling into the prepared graham cracker crust. Smooth the top with a spatula. Take the reserved strawberry puree and spoon dollops onto the surface of the mousse. Use a toothpick or a skewer to gently swirl the puree into a pretty pattern. Place the pie in the refrigerator and let it chill for at least 4 hours or overnight.
Once the pie is fully chilled and set, it's ready to be devoured. Slice it into beautiful wedges and serve with a dollop of whipped cream or a sprinkle of fresh strawberries. Every bite will be a heavenly delight!
