Start by preheating your oven to 350°F (175°C) and greasing a 9x9 inch (23x23 cm) baking pan.
In a medium-sized bowl, whisk together 1 cup (120g) of all-purpose flour, 1/2 cup (40g) of unsweetened cocoa powder, 1/2 teaspoon of baking powder, and a pinch of salt.
In a heatproof bowl, microwave 8 ounces (225g) of Chimera chocolate chunks and 1/2 cup (113g) of unsalted butter in 30-second intervals, stirring in between, until melted and smooth. Let it cool slightly.
In a separate large bowl, whisk together 1 and 1/4 cups (250g) of granulated sugar, 3 large eggs, and 2 teaspoons of vanilla extract until well combined.
Gradually pour the melted chocolate mixture into the sugar mixture, stirring until fully incorporated.
Add the dry ingredients to the chocolate mixture and gently fold until just combined. Be careful not to overmix!
Stir in an additional 4 ounces (115g) of Chimera chocolate chunks for that extra fudgy goodness.
Pour the batter into the prepared baking pan and spread it evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
Remove the brownies from the oven and let them cool completely in the pan before cutting into squares. This will help them set and achieve that perfect fudgy texture.
