In a saucepan over medium heat, melt 1 cup of granulated sugar. Stir constantly until the sugar has melted and turned a golden brown color. Be careful not to burn the caramel!
Once the caramel is ready, carefully add 1/4 cup of cognac to the saucepan. The mixture may bubble up, so be cautious. Stir well to combine the caramel and cognac.
In a separate saucepan, heat 2 cups of heavy cream and 1 cup of whole milk over medium heat until it starts to steam. Don't let it boil!
In a mixing bowl, whisk together 4 egg yolks and 1/2 cup of granulated sugar. Gradually pour the heated cream and milk mixture into the egg yolk mixture, whisking constantly.
Pour the tempered egg mixture back into the saucepan with the remaining cream and milk. Cook over low heat, stirring constantly, until the custard thickens slightly and coats the back of a spoon.
Transfer the custard to a bowl and cover it with plastic wrap, making sure it touches the surface to prevent a skin from forming. Refrigerate for at least 4 hours or overnight.
Once the custard is chilled, pour it into your ice cream maker and churn according to the manufacturer's instructions. This usually takes about 20-30 minutes.
When the ice cream is almost done churning, slowly drizzle the coiled caramel mixture into the machine. Let it incorporate for a few more minutes.
Transfer the churned ice cream into a lidded container and freeze for at least 4 hours or until firm. Serve in bowls or cones, and savor the coiled caramel cognac goodness!
