In a large mixing bowl, combine rolled oats, flour, sugar, shredded coconut, and baking soda. Melt butter and golden syrup in a saucepan over low heat until smooth. Pour the melted mixture into the dry ingredients and stir until well combined.
Scoop tablespoonfuls of the biscuit dough onto lightly greased baking sheets, leaving enough space in between for spreading. Flatten the dough slightly with the back of a spoon. Bake in a preheated oven at 325°F (160°C) for 10-12 minutes, or until golden brown. Let the biscuits cool on the baking sheets.
Take your favorite flavor of ice cream out of the freezer and let it soften for a few minutes. Once the biscuits have completely cooled, place a scoop of ice cream on the flat side of one biscuit. Press another biscuit on top to create a sandwich. Repeat this step for the remaining biscuits.
