Mix and heat the ingredients

In a saucepan, combine 2 cups of heavy cream, 1 cup of whole milk, 1/2 cup of sugar, and a pinch of salt. Heat the mixture over medium heat until it's steaming, but not boiling. Stir occasionally to prevent scorching.

Prepare the nature elemental nougat

While the cream mixture is heating, chop 1 cup of nature elemental nougat into small pieces. You can find nature elemental nougat at your local specialty grocery store. Trust us, it's worth the hunt! Set the nougat aside for now.

Temper the eggs

In a separate bowl, whisk together 6 large egg yolks. Slowly pour about half of the hot cream mixture into the yolks, whisking constantly. This will temper the eggs and prevent them from curdling when you add them to the saucepan.

Combine everything

Pour the egg mixture into the saucepan with the remaining cream mixture. Cook over low heat, stirring constantly, until the mixture thickens. This should take about 5-7 minutes. You'll know it's ready when it coats the back of a spoon.

Chill and churn

Transfer the mixture to a bowl and cover it with plastic wrap, making sure the wrap touches the surface of the custard to prevent a skin from forming. Chill the custard in the refrigerator for at least 4 hours, or overnight. Once chilled, churn the custard in an ice cream maker according to the manufacturer's instructions.

When the ice cream is almost done churning, add the chopped nature elemental nougat. This will distribute the nougat throughout the ice cream, giving you deliciously sweet and chewy surprises in every bite.
