Be careful not to add too much spice or it might overpower the creamy goodness of the ice cream. Also, don't let it melt too much during the preparation process, or you'll end up with a chai milkshake instead of ice cream!
In a saucepan, bring 2 cups of water to a boil. Add 4 chai tea bags and let them steep for 10 minutes. Remove the tea bags and let the chai tea cool completely.
In a mixing bowl, combine 2 cups of heavy cream, 1 cup of whole milk, 3/4 cup of granulated sugar, and a pinch of salt. Whisk until the sugar is completely dissolved.
Pour the cooled chai tea into the ice cream base mixture. Add 1 teaspoon of ground cinnamon, 1/2 teaspoon of ground ginger, 1/4 teaspoon of ground cardamom, and a pinch of ground cloves. Mix well.
Cover the mixture and refrigerate for at least 4 hours, or preferably overnight. Once chilled, transfer the mixture to an ice cream maker and churn according to the manufacturer's instructions. This typically takes about 20-30 minutes.
Transfer the churned ice cream into an airtight container and freeze for an additional 4 hours to firm up. Then, scoop it into bowls or cones, and sprinkle some extra cinnamon on top if desired. Dive in and savor the deliciousness!
