In a small saucepan, combine 1 cup of water and 1 cup of granulated sugar. Stir over medium heat until the sugar is fully dissolved. Remove from heat and let the syrup cool.
In a blender, combine 1 cup of fresh mint leaves (packed) and the juice of 4 limes. Blend until well combined and the mint leaves are finely chopped.
In a large bowl, combine the mint-lime mixture, 2 cups of sparkling water, and 1/2 cup of the prepared simple syrup. Stir until fully mixed.
Carefully pour the mojito base into popsicle molds, leaving a small gap at the top. Insert popsicle sticks into each mold.
Place the popsicle molds in the freezer and let them freeze for at least 6 hours, or overnight. Once fully frozen, remove the popsicles from the molds and enjoy the cool, minty goodness!
