Beat the heat with our cool and vibrant Basil Blueberry Bellini Popsicles. A fun and tasty way to chill out this summer!

In a small saucepan, combine 1 cup of blueberries, 1/4 cup of sugar, and 1/4 cup of water. Bring the mixture to a boil over medium heat, stirring occasionally. Once the blueberries have burst and the sugar has dissolved, remove the saucepan from the heat.
Add 10 fresh basil leaves to the blueberry syrup. Let it cool for about 10 minutes to allow the flavors to infuse. Remove and discard the basil leaves.
Pour the blueberry basil syrup into a blender and blend until smooth. Strain the mixture through a fine-mesh sieve to remove any pulp or seeds. Discard the solids.
Return the strained syrup to the saucepan. Add 1 cup of chilled prosecco and stir until well combined. If you prefer a non-alcoholic version, you can substitute sparkling water or lemon-lime soda.
Carefully pour the blueberry bellini mixture into popsicle molds, leaving a little space at the top for expansion. Insert popsicle sticks into each mold.
Place the filled popsicle molds in the freezer and freeze for at least 6 hours or until completely solid. Once frozen, remove the popsicles from the molds by running warm water over the bottom of the molds. Enjoy your refreshing Basil Blueberry Bellini Popsicles!
