In a large bowl, combine 1 and 1/2 cups of all-purpose flour, 1 teaspoon of baking powder, and a pinch of salt. Mix well.
Add 1/2 cup of melted butter, 3/4 cup of granulated sugar, 2 eggs, 1/4 cup of milk, the juice of 2 limes, and 2 tablespoons of finely chopped fresh mint leaves to the flour mixture. Stir until well combined.
Line a muffin pan with cupcake liners. Fill each liner about 2/3 full with the cupcake batter.
Preheat your oven to 350°F (175°C). Place the filled muffin pan in the oven and bake for approximately 18-20 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
In a mixing bowl, beat 1/2 cup of softened butter until creamy. Gradually add 2 cups of powdered sugar, the juice and zest of 1 lime, and 1 tablespoon of rum. Beat until smooth and fluffy.
Once the cupcakes have cooled completely, frost them with the Mojito frosting. You can use a piping bag for a fancy touch or simply spread it with a knife.
Garnish each cupcake with a fresh mint leaf and a sprinkle of lime zest. Serve and enjoy these delightful Mojito-infused cupcakes!
