Preheat your oven to 350°F (175°C) and line a cupcake tray with paper liners. In a medium bowl, whisk together 1 and 3/4 cups of all-purpose flour, 1 and 1/2 teaspoons of baking powder, and 1/4 teaspoon of salt.
In a separate large bowl, cream together 1/2 cup of softened unsalted butter and 1 cup of granulated sugar. Beat in 2 eggs, one at a time, followed by 2 teaspoons of freshly grated ginger and the zest of 1 lime. Add 1/4 cup of milk and 1/4 cup of freshly squeezed lime juice, mixing well.
Gradually add the dry ingredients from step 1 to the wet ingredients in step 2, mixing until just combined. Be careful not to overmix! Fill each cupcake liner about 3/4 full with batter.
Pop those delicious cupcakes into the preheated oven and bake for approximately 18-20 minutes, or until a toothpick inserted into the center comes out clean. Once baked, remove from the oven and let them cool completely on a wire rack.
Prepare the ginger-lime frosting by beating together 2 cups of powdered sugar, 1/2 cup of softened unsalted butter, 1 tablespoon of freshly squeezed lime juice, and 1 teaspoon of vanilla extract. Finally, mix in 1/2 teaspoon of freshly grated ginger. Frost your golden cupcakes with this tangy delight!
