Gradually add the dry ingredients to the wet mixture until a dough forms. Divide the dough into two equal portions, wrap in plastic wrap, and chill in the refrigerator for at least 1 hour.

Bake the Sourdough Cookies

Preheat your oven to 350°F (175°C). Take out the chilled dough from the refrigerator and let it sit at room temperature for a few minutes. Roll out one portion of the dough to a 1/4-inch thickness on a lightly floured surface. Use a round cookie cutter to cut out cookies and place them on a baking sheet lined with parchment paper. Repeat with the remaining dough. Bake the cookies for 10-12 minutes or until golden brown around the edges. Remove from the oven and let them cool completely.

Assemble the Ice Cream Sandwiches

Take your favorite flavor of ice cream out of the freezer and let it soften slightly. Place a scoop of ice cream on the bottom side of a cooled cookie. Gently press another cookie on top to create a sandwich. Repeat with the remaining cookies and ice cream. Place the assembled ice cream sandwiches in the freezer for at least 1 hour to firm up.
