Gradually add the dry ingredients to the butter mixture, mixing until just combined. Stir in 2 cups (340g) of chocolate chips until well distributed throughout the dough.
Drop rounded tablespoonfuls of dough onto ungreased baking sheets, spacing them about 2 inches apart. Bake for 10-12 minutes, or until golden brown around the edges. Allow the cookies to cool on the baking sheets for a few minutes, then transfer them to wire racks to cool completely.
Once the cookies have cooled, it's time to assemble your fancy sandwiches! Pair up cookies that are similar in size. Scoop a generous amount of your favorite ice cream onto the bottom side of one cookie, then place another cookie on top, pressing gently to create a sandwich. Repeat with the remaining cookies. For an extra fancy touch, roll the sides of the ice cream sandwiches in your favorite toppings, such as crushed nuts or sprinkles.
