In a mixing bowl, cream together 1 cup of unsalted butter and 1 cup of granulated sugar until light and fluffy. Then, beat in 2 large eggs one at a time. In a separate bowl, whisk together 2 1/4 cups of all-purpose flour, 1/2 cup of unsweetened cocoa powder, 1 teaspoon of baking soda, and 1/4 teaspoon of salt. Gradually add the dry ingredients to the wet ingredients and mix until well combined.
Fold in 2 cups of mini marshmallows into the cookie dough. The marshmallows will add a gooey surprise to every bite!
Scoop tablespoon-sized portions of the dough and shape them into balls. Place the dough balls onto a baking sheet lined with parchment paper, spacing them about 2 inches apart. Bake at 350°F (175°C) for 10-12 minutes, or until the edges are set and lightly golden. The centers will still be slightly soft.
Allow the cookies to cool for a few minutes on the baking sheet, then transfer them to a wire rack to cool completely. Meanwhile, melt 12 ounces of semisweet chocolate chips in a microwave-safe bowl in 30-second intervals, stirring after each interval, until smooth. Dip each cookie halfway into the melted chocolate, allowing any excess to drip off. Place the dipped cookies back on the wire rack and let the chocolate set completely.
