In a large mixing bowl, cream together 1 cup (2 sticks) of softened unsalted butter, 1 cup of granulated sugar, and 1 cup of packed brown sugar until light and fluffy. Add in 2 large eggs and 1 teaspoon of vanilla extract, and beat until well combined. In a separate bowl, whisk together 3 cups of all-purpose flour, 1 teaspoon of baking soda, and 1/2 teaspoon of salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined. Stir in 2 cups of chocolate chips.

Assemble the Oreo-Stuffed Cookies

Scoop about 1.5 tablespoons of cookie dough and flatten it in your palm. Place an Oreo cookie in the center and cover it with another flattened dough. Gently press the edges together to seal the Oreo inside. Roll the dough into a ball to ensure it's nicely shaped. Repeat this process for the remaining dough and Oreos until you have a tray full of Oreo-stuffed dough balls.

Bake the Cookies

Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper. Place the Oreo-stuffed dough balls on the sheet, spacing them about 2 inches apart. Bake in the preheated oven for 12-15 minutes, or until the edges are golden brown. The centers may appear slightly undercooked, but they will firm up as the cookies cool. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
