In a large bowl, cream together 1 cup of softened butter and 1 cup of white sugar until light and fluffy. Beat in 2 eggs, one at a time, then stir in 2 teaspoons of vanilla extract. In a separate bowl, combine 3 cups of all-purpose flour, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt. Gradually add the dry ingredients to the wet ingredients and mix well. Stir in 2 cups of chocolate chips.
Preheat your oven to 350°F (175°C). Drop rounded tablespoons of dough onto ungreased baking sheets. Bake for 10-12 minutes, or until the edges are lightly golden. Allow the cookies to cool on the baking sheets for 5 minutes, then transfer them to wire racks to cool completely.
Once the cookies are completely cool, take a generous scoop of your favorite ice cream and place it on the flat side of one cookie. Top it with another cookie, flat side down, and gently press together until the ice cream is sandwiched between the cookies. Repeat with the remaining cookies and ice cream.
