Preheat your oven to 350°F (175°C). In a mixing bowl, cream together 1 cup (2 sticks) of softened butter, 1 cup of white sugar, and 1 cup of packed brown sugar until fluffy. Beat in 2 eggs and 1 teaspoon of vanilla extract. In a separate bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, 1 teaspoon of cinnamon, and a pinch of salt. Gradually add the dry ingredients to the wet mixture and mix until just combined. Stir in 2 cups of rolled oats and 1 cup of raisins. Drop rounded spoonfuls of dough onto a baking sheet lined with parchment paper. Bake for 10-12 minutes or until golden brown. Let the cookies cool completely before proceeding to the next step.
Select your favorite flavor of ice cream and allow it to soften slightly at room temperature. Take two cooled oatmeal raisin cookies and place a scoop of ice cream on the flat side of one cookie. Gently press another cookie on top of the ice cream to create a sandwich. Repeat this process until all the cookies are used up. Place the ice cream sandwiches in the freezer for at least 1 hour to allow the ice cream to firm up. Once they're properly chilled, serve and enjoy!
