Making the Gluten-Free Cone Batter

In a bowl, mix together 1 cup of gluten-free flour, 2 tablespoons of sugar, and a pinch of salt. In a separate small bowl, whisk together 1 egg and 1/2 cup of milk. Shaping the Fish Cone

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper. Spoon 1-2 tablespoons of the batter onto the parchment paper, then use the back of the spoon to spread it into the shape of a fish. Repeat this step, leaving enough space between each fish shape. Bake in the preheated oven for 5-7 minutes, or until the cones are lightly golden and crisp.

Cooling and Assembly

Remove the fish-shaped cones from the oven and let them cool completely on a wire rack. While they're cooling, soften your favorite gluten-free ice cream at room temperature until it's easily scoopable. Once the cones are cool, gently separate them from the parchment paper. Scoop the ice cream into the middle of each cone, using a knife or spatula to shape it like a fish tail. You can even add some chocolate chips for eyes!
