Start by extracting the juice from fresh pomegranates. Cut the fruit in half and gently press each half to release the juice. You can also use store-bought pomegranate juice if preferred.
In a saucepan, heat the pomegranate juice on low heat. Add gelatin and sugar to the saucepan, stirring until fully dissolved. Once combined, remove from heat.
Allow the pomegranate mixture to cool slightly, then slowly pour in the sparkling water or champagne. This will add a delightful fizz to your jelly shots.
Carefully pour the mixture into individual shot glasses or a jelly shot mold. Place them in the refrigerator and let them set for at least 4 hours, or until firm.
Once set, remove the jelly shots from the refrigerator and garnish with pomegranate seeds for an extra burst of flavor. Raise a glass and enjoy these refreshing Sparkling Pomegranate Jelly Shots!
