In a bowl, combine 1 pound of cubed meat (preferably pork or chicken), 1/4 cup of olive oil, 2 tablespoons of lemon juice, 2 minced garlic cloves, 1 teaspoon of dried oregano, and a pinch of salt and pepper. Mix everything together and let the meat marinate in the fridge for at least 1 hour, or overnight for maximum flavor.
If using wooden skewers, soak them in water for 30 minutes to prevent them from burning. Thread the marinated meat onto the skewers, leaving a small gap between each piece. This ensures even cooking and makes it easier to flip the skewers on the grill.
Preheat your grill to medium-high heat. If using a charcoal grill, wait until the coals turn ash gray before placing the skewers on the grates. If using a gas grill, preheat for about 10 minutes. The grill should be hot enough to create a sizzle when the skewers hit the grates.
Place the skewers on the preheated grill and cook for 8-10 minutes, turning occasionally. Keep a close eye on them to prevent burning. The meat should be nicely charred on the outside and cooked through on the inside. If using a meat thermometer, make sure the internal temperature reaches 165°F (74°C) for chicken or 145°F (63°C) for pork.
Once the skewers are done, remove them from the grill and let them rest for a few minutes. Serve the Greek Souvlaki with some warm pita bread, tzatziki sauce, sliced tomatoes, and a sprinkle of fresh parsley. Get ready to indulge in the flavors of Greece!
