In a double boiler, melt 200g of dark chocolate until smooth and glossy.
Pit and roughly chop 500g of dates, then place them in a pan with 100ml of water. Cook over medium heat until the dates soften and absorb the water, creating a thick paste.
Add a pinch of sea salt and 1 teaspoon of vanilla extract to the date paste. Stir well to combine the flavors.
Pour the melted dark chocolate into the date paste. Stir thoroughly until the chocolate is fully incorporated and the mixture becomes uniform.
Line a baking tray with parchment paper. Take small portions of the mixture and roll them into balls. Place the balls on the tray, leaving some space between each. Refrigerate for 30 minutes to set.
In a small bowl, mix together 50g of cocoa powder and 50g of powdered sugar. Roll the chilled date delights in the cocoa-sugar mixture until coated evenly.
