Preheat your oven to 350°F (175°C). We need the baking magic to work its wonders!
In a mixing bowl, combine 2 cups of all-purpose flour, 1 and 3/4 cups of granulated sugar, 3/4 cup of cocoa powder, 2 teaspoons of baking powder, 1 teaspoon of baking soda, and a pinch of salt. Mix all the dry ingredients together until well combined.
In a separate bowl, whisk together 3 large eggs, 1 cup of buttermilk, 1/2 cup of vegetable oil, and 2 teaspoons of vanilla extract. Slowly pour the wet ingredients into the dry mixture while stirring continuously. Keep stirring until you have a smooth batter.
Pour the batter into a greased and lined baking pan. Smooth the top with a spatula. Place it in the preheated oven and bake for approximately 25-30 minutes, or until a toothpick inserted into the center comes out clean. Time to let that cake bake its way into our hearts!
Once the cake is baked and cooled slightly, lay a clean kitchen towel on a flat surface. Dust it with powdered sugar to prevent sticking. Carefully flip the cake onto the towel, remove the parchment paper, and gently roll it up. Let the cake cool completely in this rolled-up position.
In a mixing bowl, whip together 2 cups of heavy cream, 1/4 cup of powdered sugar, and 1 teaspoon of peppermint extract until soft peaks form. Unroll the cooled cake and spread the peppermint filling evenly over the surface. Then, re-roll the cake without the towel. It's like a delicious peppermint surprise waiting to be unwrapped!
To make the chocolate ganache, heat 1 cup of heavy cream in a saucepan until it begins to simmer. Remove from heat and pour it over 1 and 1/2 cups of chocolate chips in a heatproof bowl. Let it sit for a minute, then whisk until smooth. Pour the ganache over the Yule Log, allowing it to drip down the sides. Don't hold back on the drizzles!
Add some festive flair by sprinkling crushed candy canes or peppermint candies on top of the Yule Log. You can also create a winter wonderland scene by decorating with powdered sugar, chocolate shavings, or tiny edible snowmen. Let your creativity shine!
