Preheat your oven to 350°F (175°C) and line a baking pan with parchment paper, ensuring that it hangs over the edges for easy removal later.
In a large mixing bowl, combine 2 cups of unsweetened shredded coconut, 1 cup of chopped nuts (such as almonds or walnuts), 1 cup of mixed seeds (such as pumpkin or sunflower seeds), 1/2 cup of almond flour, and a pinch of salt. Stir well to combine.
In a separate bowl, whisk together 1/2 cup of melted coconut oil, 1/2 cup of honey (or maple syrup for a vegan option), and 1 teaspoon of vanilla extract.
Pour the wet ingredients into the dry ingredients bowl. Mix well until all the dry ingredients are evenly coated with the wet mixture. Make sure there are no dry spots left!
Transfer the mixture into the lined baking pan. Use the back of a spoon or your hands to firmly press the mixture down, ensuring it is evenly distributed.
Place the pan in the preheated oven and bake for 20-25 minutes, or until the edges turn golden brown. Remove from the oven and let it cool completely in the pan.
Once the bars are completely cooled, lift the granola slab out of the pan using the parchment paper overhang. Place it on a cutting board and slice into bars of your desired size.
